Things have been a little tense this week in Steeler Nation. You drop a game like that to the friggin Jets and it’s bound to happen. In spite of this team being utterly bipolar so far this season, one thing you can depend on is some tasty bites for your game day spread. Whether you’re tailgating in Tennessee or hosting your Steelers buddies over for a Monday night party, you’re going to want something delicious to go along with the game.

For a Monday night game, it’s got to be something simple. You’re probably going to work all day and the last thing you need to do is worry about slow cooking some giant piece of meat for the right amount of time and temperature for it to be ready before kickoff. What’s tasty and simple? A dip. What’s the tastiest and simplest dip for your Monday night Steelers party? Buffalo Chicken Dip.
This stuff is amazing. It’s the best part of chicken wings with a tenth of the napkin usage. And it couldn’t be easier to make and amaze your friends with your dynamic kitchen skills because it’s mostly just throwing all the ingredients into a baking dish or slow cooker and that’s it.
Here’s what you’ll need:
- 1 package of cream cheese (softened) (you can save yourself time and buy the already-softened, whipped style, or whatever it’s called)
- ½ cup of hot sauce (whatever wing sauce is your favorite)
- ½ cup of bleu cheese dressing (you can use ranch dressing if you’re into that sort of thing)
- 2 rotisserie chickens (I say use two because you’ll need about 2 cups of chicken shredded from them and there’s no way you’re not going to snack on it whilst shredding, therefore do yourself a favor and just buy 2 chickens)
- ½ cup crumbled blue cheese (or other cheese if you’ve got something against blue cheese)
I’d have to ask the question, though, if you’re against bleu cheese, what are you doing eating chicken wings? They go hand-in-hand! But, that’s between you and yourself and we don’t have time to delve into your personal issues of why you have irrational problems with certain cheeses.
Buffalo Chicken Dip
Moving on. Throw all your ingredients into a baking dish and into an oven preheated to 350 degrees or so. Here’s a tip, if you’re not sure what temperature to bake something at, 350 is almost always the way to go. It’s pretty much a standard (bake something at this temperature) temperature. Bake that tasty dip till it’s bubbly and delicious, about 20 minutes and give it a stir out of the oven to make sure it’s all combined and gorgeous.
You’ll need some hearty chips for this dip. Don’t go skimping on just regular old potato chips for this dip. Sure you can use celery and carrots like you’d get if you’d order wings, but why are you eating vegetables voluntarily? Get some thick pita chips or tortillas for this dip so you can scoop out the deliciousness and your chip won’t fall apart in the process, which is the saddest thing that can happen in ever.
If you’re tailgating, you can just throw all this stuff into a slow cooker for a few hours and it will come out great. If you’re super lazy, I’d bet you could even microwave it as well.
