Steelers Game Day Grub: Nacho Salad

For Monday Night Football whether you’re heading out to Heinz Field to tailgate or setting up your spread at home you’re going to be hungry and need something satisfying to enjoy with the game.

I was once featured in the “Are you ready for some football?” opening sequence with Hank Williams Jr. It’s a long story but my sister got us admission into the taping of the intro and we donned our favorite Steelers gear and prepared to represent proudly. During the shooting, they separated us because they wanted everyone in the jerseys spread out sporadically around the room. Anyway, long story short it was a long day of filming the opening for every Monday night game on the schedule with his little intro for each game and then again in Spanish. When the season debuted I went through the opening sequence with my DVR one screen shot at a time till I found myself in the crowd. What a moment. Then Hank decided to make some unsavory political remarks and ESPN yanked him and his song along with my television showcase from rotation. Rats.

With the Texans coming to town to face off against the Pittsburgh Steelers it got me thinking about Tex-Mex food. Now all the food can’t be bacon and cheese sandwiches so how about we spice things up this week with a salad? Since Pittsburghers are known for putting French fries on their salads, I suggest having a nacho salad in honor of the Pittsburgh Steelers facing off against the Houston Texans.

Still with me? Good, because this salad is tasty, easy, and tasty. My sister, Jenn, thought up this salad and it is friggin delicious. All you need is your favorite grilled meat; you can use chicken or steak. Season the meat with some cumin, chili powder, paprika and salt & pepper before grilling. In a sauté pan you’ll also want to throw in some fresh corn (if you can still get your hands on some sweet fresh corn you’ll really love this salad even more) and butter along with the same seasonings you used on the meat.

Nacho Salad

On a sheet pan throw some tortilla chips down and cover with your favorite cheeses. Throw that in the oven for a few minutes to melt the cheese to create the nacho base for your salad. In a bowl you’ll throw in some chopped romaine lettuce, tomatoes, cucumbers, more cheese, and anything else you like to throw into salads along with that grilled, seasoned meat.

Mix some ranch dressing with some fresh salsa. If you’ve never done this before this will change your friggin life. You’ll never want just salsa or ranch dressing alone ever again.

To assemble on your plate or bowl, start with the base of cheese nachos, throw the tossed salad with the lettuce, tomatoes, grilled meat, etc. on top and then add the cooled sautéed corn and top with your ranch dressing/salsa combo. Go to town chowing down on that tasty salad!
