Steelers Game Day Grub: Pittsburgh Salad

It’s Sunday night football. The Steelers are retiring Mean Joe Greene’s jersey. The crowd will be pumped from back-to-back wins. The Ravens are in town. It’s time to figure out what you’re grubbing on for game day.

With the Ratbirds making their visit to the Steel city it only seems appropriate that we have some poultry. Now I’m talking about chicken, I don’t know if you can eat a raven and I’m not sure I’d want to. So if you’re having some chicken, you’re going to want that chicken to be tasty right? Of course you do, what are you going around making bland chicken for?

To make some tasty chicken you can grill at home or at your tailgate, the best thing to do is find a good marinade. I have just the one for you. It’s tangy and delicious and will treat your chicken just right.

Here’s what you’ll need:

  • Fresh squeezed lemon juice
  • Dijon mustard
  • Honey
  • Salt & Pepper
  • Olive Oil

That’s it! Now I probably measured these ingredients the first time I made this marinade but after that it’s just throw it all in a bowl, whisk it up and pour it over your chicken. You’ll need to start with at least 2 lemons worth of juice for like a pound of boneless, skinless chicken breasts. For that amount of lemon juice it’s just a tablespoon or so each of the mustard and honey, salt & pepper to taste, and then a few glugs of olive oil and you’re ready to mix it up and pour it over the chicken. Just increase it from there for more chicken. You can even increase the mustard over the honey or vice versa for a tangy vs. sweet kind of thing. You can marinade anywhere from an hour to overnight.

Pittsburgh Chicken Salad.

My favorite thing to do with this kind of marinated chicken is to make a Pittsburgh Chopped Salad. Pittsburgh might be best known for the sandwiches that come with fries and coleslaw on them but we’re also known for fries on our salads as well. Specifically, fries with cheese on them. The only way to do it. Croutons can officially suck it after you’ve had a salad topped with cheese fries. Grill your marinated chicken off. Best thing to do is make extra marinade, maybe with a bit more honey than mustard in it, and you’ve got your salad dressing ready to go as well! Assemble your favorite chopped salad ingredients. Lettuce, cucumbers, tomatoes, etc. I was out last weekend somewhere and they had these kinds of salads in taco shell bowls (Genius!) but there were beets in them. What kind of crap is that? How do you just automatically add beets to someone’s salad without their consent? By the way, I’m not a fan of beets. To save yourself some time you can just buy a bag of frozen French fries, no need to get all fancy here. I like the seasoned ones myself. Throw those suckers in the oven according to the directions and then right before they’re done melt your favorite melty cheese over top. Put your salad together with the chicken and the dressing and top with your cheese fries and behold.  Pittsburgh Chopped Chicken Salad (with no beets).
