Steelers game day grub: Breakfast lasagna

The Steelers are on the road this week looking to get three in a row against the Kansas City Chiefs. We don’t know for sure yet if Ben Roethlisberger or Landry Jones will get the start but one thing we do know for sure is that we’re going to be hungry.

When thinking of what to eat for the football games each week I like to take the city the Steelers are playing against into consideration. If I’m not particularly moved by anything their city is known for I look elsewhere.

This week I decided to take advantage of the fact that we have another Sunday morning football game to enjoy courtesy of the NFL’s insistence on going to London several times a year to make some money off of European NFL fans and broadcast boring games early in the morning.

If you’re going to watch NFL from Sunday morning till the end of the Sunday night game you’re looking at 16 hours of football and for that you’re going to need a hearty breakfast. It is the most important meal of the day and should not be neglected even during football season.

Oh and have I got the breakfast recipe for you. We’re making breakfast lasagna and it’s a big, heavy dish that uses a lot of ingredients so you’ll want to make this for a crowd.

For the breakfast lasagna you’ll need:

  • 1lb cooked bacon (chopped)
  • 1lb cooked breakfast sausage (crumbled, cooked and cooled)
  • I package of shredded cheddar cheese
  • ½ package of softened cream cheese
  • 10-12 eggs (soft scrambled)
  • 6-8 frozen pancakes/waffles/French toast (toasted)
  • Maple béchamel sauce (recipe to follow)

Butter/grease up your favorite lasagna pan and prep all the ingredients. My favorite way to cook bacon is in the oven so throw those suckers on a cookie sheet lined with foil and let them crisp up in a 400 degree oven for about 15 minutes. Cook the sausage in a pan and drain on a paper towel-lined plate.

For the eggs, cook them to a very soft scramble because they will cook again in the oven. Get them to the point where they’re just about done but you could still pour them out of the pan. For the base or “noodles” of the lasagna I like the frozen French toast the best so far. I’ve tried it with just about everything.

The frozen French toast that has a cinnamon swirl adds the right stability and flavor to the whole concoction. But you be the boss of your own breakfast. You can make your pancakes, waffles, or French toast but that’s a whole bunch of extra steps. We’re too hungry for that.

For the maple béchamel sauce, it sounds way fancier and harder than it actually is. You’ll want to melt 2 tablespoons of butter in a saucepan and then sprinkle in 2 tablespoons of flour. Cook that until it smells like popcorn. Then pour in about a cup and a half of milk or half & half, whichever you have on deck.

Wisk it all together to make sure you don’t have any lumps and once the sauce has thickened you pour in about 1/3 cup of maple syrup. Add more syrup if you like some extra syrupiness in your sauce. I’m typically not a fan of syrup and eggs and cheese mixing in any other combination but this all works so well you’ll wonder where it’s been all of your life.

To assemble you lay down the “noodles” which ever you chose (pancakes, waffles or French toast) on the bottom of the pan. Sprinkle with the crumbled cooked sausage and then spoon over about half of the maple béchamel sauce. Dot with some of the softened cream cheese.

Top that layer with half of the scrambled eggs and sprinkle the shredded cheddar cheese over that. Top with another layer of “noodles” and sprinkle with the bacon and then the sauce and cream cheese. Pour the remaining eggs over top and sprinkle the top with shredded cheese.

Bake in a 350 degree oven for 15-20 minutes until the cheese is all melted and you can’t take it any longer. You’ll need to let it sit for a few minutes after it comes out of the oven because it just came out of an oven and it will burn your mouth if you dive in too quickly.

After that just cut yourself a slice and let your crowd wrestle over the remaining pieces.
